2 lbs lean ground beef
2 eggs
3⁄4 cup dry breadcrumbs
1⁄4 cup fresh parsley, chopped (or 1.3T dried parsley)
1 garlic clove, minced
1⁄2 teaspoon salt
1⁄4 cup parmesan cheese
Put all ingredients together, roll into 1" to 1 /2" meatballs . Bake at 375 for 20min (check for done-ness by cutting one in half); or simmer in spaghetti sauce for 30min.

Potatoes Au Gratin
Ingredients

- 1 tablespoons butter
- 1 tablespoons all-purpose flour
- 1/2 teaspoons salt
- 1/12 teaspoon pepper
- 2/3 cups 2% milk
- 1/3 cup shredded cheddar cheese
- 1 large potato
- 1/6 cup chopped onion
Directions
- Preheat oven to 350°. In a large saucepan, melt butter over low heat. Stir in flour, salt and pepper until smooth. Gradually add milk. Bring to a boil; cook and stir 2 minutes or until thickened. Remove from heat; stir in cheese until melted. Add potatoes and onion.
- Transfer to a greased 2-qt. baking dish. Cover and bake 1 hour. Uncover; bake 30-40 minutes or until the potatoes are tender.

Croutons
Ingredients
Directions
- 5 slices bread
- 1/8 cup butter, melted (olive oil?)
- Seasons: garlic powder, salt, seasoned salt, etc
Directions
- Preheat oven to 350 degrees F
- Brush bread on both sides with melted butter. Cut bread slices up into small cubes.
- Sprinkle with seasoning.
- Arrange cubes on an ungreased cookie sheet.
- Bake at 350 degrees F for 10 minutes or until browned.
- Let cool. Store croutons in a covered container or plastic bag. Serve in soups or salads.
