Italian Meatballs on Parmesan Noodles

Servings: 4

Ingredients
  • 1/2 cup Italian seasoned bread crumbs
  • 1/2 cup finely grated Parmesan cheese, plus more for baking
  • 1/4 cup chopped fresh parsley
  • 1 tablespoon dried oregano
  • 1/2 tablespoon minced garlic or garlic paste
  • 1/2 tablespoon kosher salt
  • 1/2 tablespoon freshly ground black pepper
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes
  • 1 large egg, beaten
  • 1/4 cup milk
  • 1 1/4 cups beef broth, divided, or more as needed
  • 1 pound 80% lean ground beef
  • Parmesan Noodles
  • 12 ounces egg noodles
  • 1 1/2 tablespoons salted butter
  • 1 tablespoon garlic paste
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons chopped fresh parsley, plus more for garnish
Directions
  1. Preheat the oven to 425 degrees F (225 degrees C). 
  2. Combine breadcrumbs, Parmesan, parsley, oregano, garlic, salt, black pepper, basil, and red pepper flakes in a bowl and mix together with a fork. Stir in egg, milk, and 1/4 cup beef broth. Add ground beef and stir with a fork just until combined.
  3. With wet hands, roll meat mixture into medium-sized balls and place in a large casserole dish. Pour in 1 cup beef broth, or enough to fill the casserole 1/4 inch deep. Sprinkle meatballs with Parmesan cheese.
  4. Bake meatballs in the preheated oven for 15 minutes. Turn meatballs over, and bake until no longer pink at the center, about 15 minutes more.
  5. For noodles, bring a large pot of salted water to a boil. Add noodles and cook until tender with a bite, about 10 minutes; drain.  
  6. Place noodles in a bowl and immediately add butter, garlic paste, Parmesan, oil, black pepper, and parsley. Stir to combine.
  7. Remove meatballs from the oven. To serve, spoon noodles onto a plate and top with meatballs. Sprinkle with more parsley. Enjoy!

Taco Seasoning

Ingredients
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon ground black pepper
  • ½ teaspoon ground paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon dried oregano
  • 1 teaspoon corn starch
Use 2 - 3 Tablespoon for 1 lb of ground beef. After browning the beef, add 1/2 Cup of beef broth and let it cook down to seal in the flavor.

Arrabbiata Sauce Recipe

Ingredients
  • 2 tablespoon olive oil
  • 1 tablespoon butter
  • 1/3 tablespoon crushed red pepper flakes more or less to taste
  • 1 medium yellow onion minced
  • 8 cloves garlic minced
  • 2 tablespoon tomato paste
  • 2 (28 ounce) cans whole tomatoes
  • 2 teaspoon sugar (optional)
  • salt + pepper to taste
Instructions
  1. Cook the aromatics. Add the olive oil and butter to a large, deep sauté set over medium heat. Add the crushed red pepper flakes and cook, stirring continuously, for approximately 2 minutes. Add the onions and mix well to combine. Cook for 4-6 minutes, or until soft and translucent, stirring often. Finally, add the minced garlic. Cook until fragrant, 1-2 minutes.
  2. Add the tomato paste and tomatoes. Increase heat to medium-high. Mix in the tomato paste and cook, stirring continuously for approximately 2 minutes. Add the tomatoes with their juice and sugar and mix well to combine.
  3. Simmer. Cook the sauce, mashing the tomatoes with a potato masher or wooden spoon. Allow the sauce to come to a low simmer before reducing heat to low. Allow the sauce to cook, uncovered, for approximately 25 minutes, mashing occasionally as needed.
  4. Blend (optional). If you prefer a smoother sauce, transfer part, or all, of the sauce to a large blender and process until desired consistency is reached. For this recipe, I pulsed half of the sauce in the blender until smooth (but not soupy).
  5. Season to taste. Season with salt and pepper, to taste, and additional crushed red pepper flakes, if desired.
Notes
  • This makes a generous batch of arrabbiata sauce - perfect for a nice and saucy pasta when tossed with a 1-pound box of cooked noodles. When mixing with cooked pasta, if you find that the sauce is too thick, easily thin it out with hot and starchy pasta water (preferred choice) or regular hot water (second choice).
  • Add 1lb Italian sausage for meat

Italian Dressing

 Servings: 8

INGREDIENTS

  • 3/4 cup olive oil
  • 1/4 cup red or white wine vinegar
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp onion powder
  • 1/2 tsp crushed red pepper
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 tsp lemon juice
Shake to mix. Store in refrigerator

Taco meat

 Ingredients:

  • 1 lb ground beef
  • 1 medium onion, diced
  • 1 tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon dried oregano
  • ½ teaspoon paprika
  • 1 ½ teaspoons ground cumin
  • 1/2 teaspoon sea salt
  • 1 teaspoon black pepper
  • 2 teaspoon corn starch
  • 2/3 cup water
Instructions:
  1. saute the onion, add beef, cook fully
  2. Mix in seasoning
  3. Mix corn starch in water and pour over beef
  4. Cook until liquid has been reduced
